I just wanted to do an official post and let everyone know that I am returning to my former blog. Truthfully, I miss it. I was on that blog for many years and it was like a comfortable pair of old shoes.

Happy Mothers Day

I wish all my friends a happy Mother’s Day tomorrow. Spend some time appreciating all your favorite mothers in your life. And here’s a little wish sent out as well to all the mother’s who are watching over us from up above.

Taco seasoning recipes

I was reading this site and found a really great taco seasoning recipe, I also remembered a couple of other ones that I used to use. I figured I would share them all here.

The best taco seasoning recipe ever

Taco seasoning mix #1



1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper


In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container. Season to taste.


Make 3 or 4 times what the recipe calls for to season to taste and save some in a jar for next time.

For 1 meal try adding 2 TBSP of the taco seasoning mix for the right amount of flavor and kick.

Taco Seasoning #2

1 t. chili powder
3/4 t. paprika
3/4 t. cumin
1/2 t. onion powder
1/2 t. salt
3/8 t. garlic powder
pinch cayenne

Combine and add to 1 pound browned and drained hamburger. Add a little water, if desired. This will be drier than taco meat made with a commercial mix due to the lack of thickeners. It tastes just as good as the store bought kind and is a lot cheaper to make. Makes enough for 1 lb. hamburger (4.5 carbs for the whole batch)(4-6 servings – 1 carb each)

A package of Taco Bell taco seasoning has 18 carbs and Old el Paso brand has 30 per package.

Mix up a bunch of this and put it in a small jar. Just measure out 4 teaspoons of the mixture per 1 pound of hamburger. See recipe below.

Taco Seasoning #3

This  recipe makes enough for about 6 meals:

2 T. chili powder
5 t. paprika
4 1/2 t. cumin
1 T. onion powder
1 T. salt
2 1/2 t. garlic powder
1/8 t. cayenne

Mix and store in a small jar. Mix well before measuring. Makes 24 teaspoons.

1 t. = 1 carb
2 t. = 2.5 carbs
3 t. = 3.5 carbs
4 t. = 4.5 carbs
5 t. = 6 carbs
6 t. = 7 carbs
8 t. = 9.5 carbs

VARIATION: Add a tablespoon or so of Taco Bell restaurant-style sauce to it to taco meat after draining the fat and stirring in the seasoning. It made it a bit more like it was made with a taco seasoning mix. It was juicer and held together better. The carbs in Taco Bell sauce are minimal, but be careful of the Ortega brand taco sauce. It has a lot of sugar in it.

Taco Seasoning #4

1/4 cup Chili Powder
1 Tblsp. plus 1 tsp. Cumin
1 1/2 tsp. Garlic Powder
1 Tblsp. plus 1 tsp. Sea Salt
1/8 tsp. Cayenne Pepper
2 1/2 Tblsp. Corn Starch

To make your Taco Meat, mix 2 Tblsp. of Seasoning and 1 cup water to 2 lbs. of cooked meat. Simmer til thickened.

The girls and their brother

The girls are adorable with their new little brother.  It is so sweet to see them come running every time he wakes up from a nap to be fed.  Rose plays “This Little Piggy” on his toes and Lotus pats him on the head like a puppy and kisses him.  Lilly is completely smitten and thinks he is so cute.  It really is so sweet to see them loving on him.

Back to the Hospital

Well apparently the nurses are concerned about my blood pressures at home so they are sending me back to the hospital. I am not terribly surprised. My blood pressures have been creeping up and I have been getting headaches with them. So now I have to hurry and get everything ready to go. I am not going to have access to the internet this time but I will try to get Wandering Aengus to post some updates for me.


I am still barely functioning with this headache.  It is truly beginning to get the best of me.  My biggest fear is that they will continue after the baby is born.  I want to enjoy my little boy.  I want to be completely in the moment, not struggling to function through a haze of pain.

The bread I made yesterday was okay, but it was a little heavy.  I am going to play with it some more to get it right.  I would love any recipes that you may have for me to try.

There are so many things that I am anxious to get at.  These things play on my mind and I feel like I am so behind on them all.

In regards to homeschooling, I am anxious to get back to it.  I don’t want to wait to get things unpacked.  We were supposed to get ink today so I that I could print off some things from the computer for us to work on, but the person I requested it from forgot it.

I have at least one book that I am looking to get from the library.  I would love to hear any websites and printables and unit studies that you enjoyed for Grade Four.

I am anxious as well to get started on preschool homeschooling 3-year-old Rose.  She is so smart and knows so much already I know she will enjoy the process and being involved.

I want to get a couch or arm chairs or a love seat or something to replace the couch that was ruined in our move.  I am tired of having no furniture in the living room.

And last of all, I am anxious to get the rest of the boxes unpacked and to get baby Reed’s room ready.  He is coming in April and I need to be ready for him.

More Cuteness

When Lotus was a baby, she would cry hysterically every time we changed her bottom.  She was so upset and the only thing that calmed her down was singing.  So I would sing nonsense songs to make her happy while I changed her.  One song that was a hit was the “Changa Bum” song.  It was silly and it made her smile.  One of the first things she or her older sister Rose started doing was saying the “Hey!” line at the end and it would make her happy.
