Hmmm . . . now what do I do?

Since starting my plant based diet, I have noticed that my Gestational Diabetes has gone through the roof. My sugars just keep getting higher and higher and I am really not sure what to do about that. I am going to approach it by trying to increase my proteins and lower my carbs and see if that helps. I am open to any ideas anybody out there may have.

  1. Yes, definitely cut back on carbs. Vegetarians often base every meal around carbs which is not great for your weight or blood glucose. Try eggs and baked beans for breakfast, but no toast. Soup is great for lunch, and include beans or tofu for protein. If you cut back on carbs for two meals a little complex carb for dinner is fine. Make it brown rice or wholemeal pasta with lots of veggies, tofu and legumes. Once you get into the swing of it it’s not so hard. Good luck.
